Chicken Bahn Mi

After being introduced to this Vietnamese dish a few months ago, I decided to give it a try in my own kitchen.  This recipe did not disappoint!

Ingredients:

*1 pound chicken breast (I used rotisserie chicken for ease, but grilled might make it ever more of a home run)
*1/4 tsp Kosher salt
*1/8 tsp black pepper
*1/4 cup reduced sodium soy sauce
*1 tbsp light brown sugar
*3 garlic cloves (I use the pre-minced)
*1 fresh jalapeno
*shredded carrots (save yourself and buy them pre-shredded)
*cucumbers sliced thinly
*cilantro to taste
*choices to serve it on – hoagie roll, brown rice, over romaine lettuce

I witnessed a miracle

I’ve committed to sharing my faith and how God has impacted my life.  Although there are every day miracles, this video documents how prayers from my son and I over a bigger issue were answered almost immediately.  There is no other explanation other than God’s intervention.  I still get teary-eyed thinking about it.  I hope it inspires you not to give up on praying (or just to start)!

Why drink Shakeology over other shakes?

shakeology-ingredients

I get questions like these a lot…Why should I drink Shakeology?  Is it really that different?  What makes it different?  Can’t I just keep drinking what I’m already drinking?

The truth is, there are so many shakes out there and I know it’s hard to figure out what’s good and what’s not.  The food giants like to trick us into thinking things are healthy for us when they’re not.  But please beware!  Not all shakes are created equal, and you can’t tell just by comparing the calories, protein and fat content.  When it comes down to it, it’s the ingredients that go into Shakeology that make it different…adaptogens, probiotics, prebiotics, amino acids, phytonutrients, digestive enzymes (all of this on top of the right balance of protein, carbs, healthy fats, vitamins and minerals).  These ingredients help you on a cellular level and significantly improve the way your body works and feels.  In the end, it’s truly the QUALITY of these ingredients that puts Shakeology above the rest.

List of Personal Development Books

personal development

5 dimensions of personal development: spiritual, emotional, mental, physical, social

I used to look at personal development books and think they were cheesy.  But when  I became a Beachbody coach, they kept talking about the importance of continually growing yourself through these kinds of books.

I decided to put away my own pride and start reading my very first PD book called The Compound Effect by Darren Hardy.  It only took about 10 pages before I realized this stuff was extremely powerful.  Now, my goal is to read personal development every day along with my daily quiet time with God.  Here’s a good list to get you started.  Some are business related, and others are about improving your life, mindset, marriage, time management skills, finances, etc. Remember, choose an area that you feel weaker in so you can strengthen that area of your life!  Happy reading!

5 Ways to Increase your Motivation

What should I do if I'm

Lately we’ve been talking about feeling motivated (or feeling completely unmotivated) in one of my challenge groups.  It’s definitely hard to stay motivated for weeks on end.  How do you keep up the same gung-ho attitude on week 8 that you had in week 1?  Honestly, you have to work at it.  In the beginning it comes naturally, and you’re ready to give it all you’ve got, but once you’re settled into your routine, you sometimes have to trick yourself into feeling motivated.

Please know that it is completely normal to feel your motivation go up and down.  Truly what matters is what you do (and don’t do) when you feel your motivation waning.  Take a look at some tips that can help you get your groove back.
